Oven smoking or smelling of burning
Most oven smoke comes from something burning off inside: residue on a new oven, spills and grease on the oven floor, cleaner left behind, or food too close to the broil element.
Soon Smoke from food or grease is a cleaning job, but sparks, a hot electrical smell or flames that don't go out mean turning the oven off at once.
What this symptom usually means

Whirlpool gives six reasons an oven smokes: a brand-new oven, cleaner residue, a heavily soiled interior, grease or food dripping onto the oven floor, food placed too close to the elements, and a faulty heating element. On a new oven, Whirlpool and GE both say some smoke and odour is normal for the first few uses, from new parts, insulation, a protective oil coating and shipping tape heating up for the first time. Whirlpool says that first-use odour is not harmful to people, but both makers warn that the fumes can harm, and in Whirlpool's words kill, some pet birds.
The kind of smell tells you most. Burnt food and grease smell sharp and smoky, and go away once the oven is cleaned. A plastic or chemical smell on a new oven is residue burning off; on an older oven it can mean something was left in the storage drawer or on the cooktop above the vent. A hot-metal or electrical smell, especially with sparks or an element that glows brightly in one spot, is different: Whirlpool says a worn element can smoke as it burns out, and that the oven should be turned off and disconnected. On a gas oven, GE says a brief odour as the oven first lights is normal and fades within a few minutes, but a rotten-egg smell means unburned gas, which is a call to leave and phone the gas utility.

- Turn it off; keep the door shut if there's flameTurn the oven off. If there are flames inside, keep the door closed: Ottawa Fire Services' advice is to turn off the heat, keep the oven door closed to contain the fire, and call 911 if the fire is growing. Don't open the door to look.
- Name the smellBurnt food and grease smell sharp and smoky. A plastic or chemical smell on a new oven is usually factory residue. A hot-metal or electrical smell, with sparks or a bright spot on an element, is a fault: Whirlpool says to turn the oven off and disconnect it. On a gas oven, a rotten-egg smell means leaving and calling the gas utility.
- Burn off a new ovenWhirlpool says to remove all packaging, run Bake at 175 °C (350 °F) for 60 minutes, repeat once or twice if the smell persists, and wipe the interior once it has cooled. GE suggests a Self Clean of at least three hours, or on ovens without it, Bake at 260 °C (500 °F) for 45 minutes. Ventilate the kitchen and move pet birds away.
- Clean the floor and spillsOnce the oven is cold, clean grease and spills from the oven floor and, on exposed elements, from around the element. Whirlpool says heavy soil and food dripping onto the floor both smoke; put a baking sheet on the rack below the dish, not on the oven bottom.
- Remove cleaner residueIf it smokes right after you cleaned it, Whirlpool suggests wiping the inside again with a vinegar and water solution and drying all surfaces thoroughly.
- Take out any foil or linerWhirlpool warns not to line the oven bottom with foil or any liner, because it can cause permanent damage. Remove it once the oven is cold.
- Check the drawer, cooktop and rack heightTake plastic, paper and pans with plastic handles out of the storage drawer and off the cooktop above the oven vent. When broiling, Whirlpool says food too close to the element smokes, so lower the rack.

How it differs by design
- Exposed bake element: spills land on or under the element and burn every time the oven heats. Clean around it only when the oven is cold and off.
- Hidden bake element: the element sits under a smooth oven floor. Spills bake onto the floor itself and smoke until they are cleaned off. Whirlpool warns not to line the oven bottom with foil or a liner, which can cause permanent damage.
- Convection ovens: the rear fan can carry grease smoke through the whole cavity, and grease on the fan cover can smoke on its own.
- Gas ovens: GE describes a brief start-up odour as normal. A yellow, sooty flame or a lingering smell is not, and gas-side adjustment is work for a certified gas contractor.
- Winter kitchens: with windows closed in an Ottawa or Gatineau winter, burn-off smoke has nowhere to go. Run the range hood on high, and plan a new-oven burn-off for a day when you can open a window.

Why is my oven smoking?
Most often it's something burning off: a new oven's factory coating, grease on the floor, cleaner residue or food too close to the broiler. Whirlpool lists these along with a failing element. Clean it once it's cold; if there are sparks or an electrical smell, turn it off at the breaker.
How long does a new oven smell last?
Whirlpool and GE both say it should fade after the first few uses. Whirlpool's burn-off is 175 °C (350 °F) for 60 minutes, repeated once or twice; GE suggests a self-clean of at least three hours, or 260 °C (500 °F) for 45 minutes.
Is smoke from a new oven harmful?
Whirlpool says new-oven odour and smoke is normal and not harmful, but both Whirlpool and GE warn that the fumes can harm some pet birds. Ventilate the kitchen and move birds to another closed room.
What should I do if there's a fire in my oven?
Turn off the heat and keep the door closed to contain the fire, as Ottawa Fire Services advises. Call 911 if the fire is growing. Don't open the door to look or throw water on it.
Why does my gas oven smell when it first turns on?
GE says a brief, unusual odour as the oven starts is normal and goes away within a few minutes. A rotten-egg smell is not: GE says it is not normal to smell unburned gas. Leave and call the gas utility.
