Oven heating unevenly
Not urgent Uneven baking is a nuisance rather than a hazard, so there is no need to stop using the oven while you work through the checks.
What this symptom might mean
Every oven has warmer and cooler zones; the question is whether yours has become worse or is being used in a way that exaggerates them. Whirlpool's checklist covers the usage side: an oven that is not level lets batter pool to one side; putting food in before the preheat finishes over-browns the top while the bottom stays raw; dark pans brown faster than shiny ones; two trays on one rack, or foil on the rack, block heat from circulating; and frequent door opening drops the temperature and stretches cooking time.
If none of that explains it, the oven itself may have changed. A convection fan that has stopped or slowed leaves hot air pooled at the top. A bake element with a dead section, or a broil element that has failed on an oven that uses both to preheat, shifts heat to one side. A door gasket that has hardened or torn lets heat out at one corner. And a temperature sensor that reads wrong can make the whole oven run hot or cold, which looks like unevenness on long bakes.
Safe checks you can do first
- Level. Put a spirit level on the centre rack, front-to-back and side-to-side. Adjust the range's feet or, for a wall oven, note it for the technician; a wall oven's level is set at installation.
- Preheat fully. Wait for the preheat signal, then give it another five to ten minutes on older ovens before loading. Use an oven thermometer to see whether the displayed temperature is real.
- Rack position and pans. Use the centre rack for single trays, leave space around pans, and do not line racks with foil. Rotate trays halfway through as a workaround, not a fix.
- Bakeware. Dark or non-stick pans brown more; insulated or shiny pans less. Compare results with the same pan before deciding the oven has changed.
- Convection fan. On a convection cycle, listen for the fan and, with the light on, watch for movement. If the fan is silent or grinds, note it.
- Door seal. With the oven cool, run a hand around the door gasket and look for gaps, tears or flattened sections, and check that the door closes squarely. A warm draft at one corner during a bake points at the seal.
- Look at the elements. With the oven off and cool, look at the bake and broil elements for blisters or breaks. Do not touch or test them.
Nothing above involves gas, wiring, refrigerant or removing panels. Those are technician-only: Removing the rear panel to reach the convection fan or sensor; Testing or replacing elements; Adjusting a wall oven's mounting or level.
Repairs a technician may recommend
After inspection, not from the symptom alone.
- Convection fan motor or blade replacement. When the fan is silent, slow or noisy on a convection cycle.
- Bake or broil element replacement. When an element has a dead section or visible damage.
- Door gasket replacement or door hinge adjustment. When the seal is damaged or the door does not close squarely.
- Temperature sensor replacement. When the oven runs consistently hot or cold against a thermometer and cannot be brought in with calibration.
- Calibration offset. When the oven is even but off by a fixed amount; see oven temperature inaccurate.
- Control board replacement. When elements cycle wrongly because of a failed relay.
When to book
Book when the oven is level, you are preheating fully and using the centre rack, and results are still lopsided; when the convection fan is silent or noisy; when you can feel heat escaping at the door; or when an element shows damage. Questions
Is some unevenness normal?
Yes. Manufacturers describe rotating pans and using the centre rack as normal practice. What is not normal is a change: an oven that used to bake evenly and now does not.
Why is the top burning while the middle is raw?
Loading before the preheat finishes is the usual cause; the broil element is still on. A failed bake element with the broil element doing all the work gives the same result and needs a technician.
My convection oven bakes worse than my old regular oven. Why?
Convection runs hotter and dries faster; most manuals say to reduce the temperature by about 15 °C (25 °F) or use the oven's convection conversion. If the fan is not running at all, that is a fault.
Can the oven be calibrated to fix uneven heating?
Calibration shifts the whole oven hotter or cooler. It helps when the oven is uniformly off, not when one side is hotter than the other.
